Regardless of your summertime goals, enjoy the listed vegetables as this season consists of intense flavors. If you wait too long you might miss out on some of healthiest and tastiest foods.
1. Asparagus – With only 40 calories per cup this is the perfect snack and side dish. Ditch those potato chips and licorice and resort to the anti-aging and anti-cancer filled vegetable. Now is the season to get the most out of asparagus, so utilize it. Don’t forget to cut the ends of green food regardless of shape or size!
2. Beets – Some hate them, others love them. Available from late fall to early spring, now is your chance to start appreciating Mother Nature’s finest. The root vegetable can lower your cholesterol by 40% and it only takes 1/3 cup. They’re also a great source of vitamin K, calcium and follate.
3. Peas – Move over bananas, a cup of peas has over 300mg of potassium. If you’re not a fan toss them in salads or soups. They are a great source of protein, vitamins and minerals. Make sure to eat them in their rawest form, by buying them in pod form and cooking them to your liking; but don’t overcook these little guys!
